Got Romas? Make Fresh Salsa!

Several years ago our family investigated and then invested in Square Foot Gardening.

The first year we had a BUMPER crop of everything we planted. It was crazy.

Last  year we ate cucumbers every day for weeks. We had a ton of carrots. We grew lots of lettuce.

Tomatoes? Well, my garden yielded a total of four tomatoes. And those were harvested in NOVEMBER.

I talked to many gardeners and they said they had the same dismal experience, due to the colder summer and Too Much Rain. I guess 2016 was not the Summer of the Tomato.

This summer, however, has been PERFECT for growing tomatoes, with just enough moisture and lots of hot days.

To ENSURE I would have enough tomatoes to make salsa, I planted 23 plants. I may or may not be an overachiever.

We have Romas. In abundance. Good thing, though. Because we LOVE this Fresh and Easy Salsa.

Now, if you have strong religious views against using canned tomato sauce in your salsa, then this recipe is not for you. Instead, opt for “Add a Pinch’s” Pica de Gallo, which is basically fresh tomatoes, onions, jalapenos and cilantro.

I love me some Pico, but there’s something sultry about this salsa.

Plus, my sister-in-law shared the recipe with me, so every time we make it, I think of Leigh. But mostly, I love this recipe because my kids LOVE it.

Salsa made from fresh Roma tomatoes, onions and green peppers.

Tomato, Onion, Pepper Base:
  • 5 whole Roma Tomatoes tops cut off and tomatoes cut in chunks
  • 1 medium white onion peeled and cut into fourths
  • 1 medium green pepper stemmed, seeds removed, cut in chunks
  • 1 large jalapeno stemmed, seeds removed, cut in half
Spices and Sauce:

Instructions
  1. Place the first four ingredients in a food processor and blend until it is to your desired consistency, chunky, finely pureed or something in-between.

  2. Add the rest of the ingredients and blend.
  3. Cover and refrigerate for several hours so the flavors can marry.
