I hope you are smiling.

Poop Soup. That has a great ring to it, doesn’t it? Now, the original recipe of this soup comes from a lovely site, which I will share in a jiffy. But first, some background info.

Sugar turns Lori into a raging lunatic. I love my life without sugar. I love love love my life without sugar.

I have been browsing the No Sugar food sections on Pinterest and ran into this lentil soup. There are several varieties out there; some have more of an Italian twist, with lots of basil/oregano, etc.

I loved this one from food blogger Cookie + Kate because it has cumin and curry powder. The cumin and curry TOTALLY rounded out this soup. I loved it. And I thought of my sister Kelly while I ate it. Because she likes good food and will most likely love love love this soup.

A quick note about the spices; I buy plenty of cheap spices but I always buy the expensive cumin and curry. Why? The flavor. Oh. My. Stars.

I upped the kale and added zucchini, which transformed Kate’s sweet soup into WOW, THAT’S A HELLUVA LOT OF FIBER SOUP, better named “If you Need to Poop Soup” by my 13-year old son.

By the way, this soup looks healthy. I mean, really healthy. Everyone at my table eyed it with distrust then opted for the chicken and noodle soup that smart Mama Lori provided.

  1. Heat the olive oil in your soup kettle. Add the onion and carrots, stir a bit and then cover with a lid. Let the onions and carrots hang out with the olive for 5-10, depending on how mellow you like your onions.
  2. Add the garlic and stir.
  3. Add the tomatoes and stir.
  4. Add the lentils, broth and water.
  5. Add the spices: cumin, curry powder, thyme, salt, red pepper flakes and pepper.
  6. Turn up the heat until it is just boiling, then turn the heat down to a soft simmer. Cover for 20-30 minutes or until lentils are soft, checking every so often.
  7. Here's the fun part. Once the lentils are soft, you can blend some of this soup. It will become rich and creamy. Carefully remove some of the soup, 2-4 cups, and carefully put into a blender. Zip it until smooth. Or, you can use an immersion blender. Be careful for splatters! (One trick is to cover the bowl with a towel, insert the immersion blender, keeping your hands ON TOP of the towel...)
  8. Return the blended soup into the rest of the pot.
  9. Add the kale and zucchini. Cook for 15 minutes. If you really need to poop, then only allow the kale and zucchini time to warm up. Robust kale and raw zucchini are full of fiber.
